Creaming Fruits

Hi folks,

I'm trying to get some "& cream" mixes going. Any advice on %?

I only have Bovarian Cream at the moment and I'm looking at Raspberry and Banana as fruit elements.

Having said that, if there are better cream options I'm all too willing to buy more concentrates.

Personally I would go with around 5% fruit and around 10% cream and would use a mixture of Bavarian cream and sweet/whipped cream.

That's just my thoughts, and taste is subjective but could be a good starting point.

You will need to steep cream based juice though I believe....

Capella do a few varieties of cream,whipped/irish etc.

I used the whipped cream to make peaches & / Strawberry & /custard /coconut /

The list is as long as your imagination,and I used 3% cream added to whatever the individual concentrate tasted like (so strawberry being weaker than watered down lager was 20% with 3% cream,the coconut was 3%,peaches were 5%,all with 3% cream)

Cheers fellas. I don't mind steeping at all and figured it may take a bit of developing to get the cream coming through.

Time to buy a few more creams then.

I'll try heavy on the cream 75% and around 50%, see how it goes!

I don't know about other cream flavours, but mine (fantasy fudge) needs only a tiny amount or it's too sickly - I only use 3-5 drops per 10ml of juice.
Flavours that blend well with cream:
raspberry, summer fruits, strawberry, Peach

Do you get the cream coming through that low? What sort of steep time?

Comes through very strong at that level. I can't comment on other brands, but it seems to be pretty strong across the board.
I'm not the best person to ask about steeping - too impatient, but the creamy flavours are reported to benefit from a couple of weeks
