anyone know of an additive that can give a fizz like quality to flavours? sort of get it a bit in some cola type flavours but would like to replicate in other fruit mixes

yes Somewhere on this section not long ago we had a big long discussion and I think we came to the conclusion that it was the likely culprit ... or one of them

Sour (malic acid) was what I used and I worked well for me with a citrus mix I was working on.

The problem I've had with malic acid is getting the flavour balance right - I get the tingle on the tongue - but I also get the flavour of malic acid alongside whatever flavour I've used it in - It's like the sourness of sharp or unripe apples (not that silly really considering malic acid is extracted from apples! )

I need to do a bit more juggling with flavour and sweetener % in there I think

Perfect for i want to do, had some bahrani apple gold from inawera and it's a nice apple little bit sour and reminds me of those pickamix sweets, so gonna try to recreate them by making them sourer
