Showing beginners stupidity again but here goes nothing!
Am I right in thinking that a regulated mod detects the coil and regulates itself automatically? Or does it mean something completely different?
Ie: If I got a RTA and built a coil on it the mod would detect the ohm reading and adjust to match the coil?

Regulated means you can adjust stuff. You can tell it to regulate the output.

Unregulated just gives whatever is in the battery.

Some regulated mods have a 'smart' function or similar which does the whole auto detect and adjust thing, but the whole once I've tried that it was well off my preferences (might or might not be good for others though).

Confirming what @pdg said same mods will suggest a wattage when you put a new coil/tank/rda on top, in practice it becomes more of an annoyance as it will frequently do this if you remove the tank to clean it and then put it back. Also a lot of the time you can’t disable this feature which makes it doubly annoying.
It could be useful to beginners to give you a starting point but as a rule of thumb start with your wattage low and gradually bump it up until you achieve the vape you like.

MOST regulated mods will not adjust the wattage to suit the coil resistance but allow you to regulate it to obtain your sweet spot.

No ..unless it's setup like that some are
.not many
Regulated means as has been said you can adjust wattage mainly ..some you can adjust the power curve and more ..
Some have temp control which you set and just vape...
The DNA has the function to give you the same vape every time
But that's in the 75w and above
