I have had some kitchen knives come into the shop for new scales aka (handles)
these have proved a proper journey its been a long time since I have made any knife type implement

these are german kitchen knives they have suffered from being through a dishwasher so the scales are salt damaged the rivets broken the blades blunt from a pull through and butchers sharpening iron
a quick polish the scale can be redone but the rivets are shot they are press-fitted cutlers rivets
I will use a mosaic pin for one rivet
but I need to drill out the holes from 4mm to 6.5mm to 8 mm to use normal solid brass rivets
tricky the tangs on the large knives are fine the drills go through but the 2 smaller knives the tangs are hardened its a common thing the hardening has travelled up into the tang so making them very hard, harder than bruce lee in a tank. in the end, I had to use super, super hard cobalt drills the one above failed so I ended up heat-treating the tang to take the edge off its hardness drilling away the knife was groaning, I was groaning, the miller was groaning, shop full of smoke but we made it 4 hours to drill 4 holes.
I've inserted the rivets and bonded the scales on I will need to peen the rivets aka knock seven shades out of them so they expand and grip not hitting the knife scale or myself or alfie
first sand and polish
all rivets in more sanding polishing repeat on each knife on the polisher and sander at high-speed, mask on, blades covered I can't wear gloves as I need a grip
finally done I've sharpened them up but I haven't dressed the blades as this will remove metal they are paper cut sharp not uber sharp as the metal won't keep that edge
on and off this has taken a week to do but it was good to go back and do it again
