Hey all...been a while since I hit the boards...hope all is well over the pond...so I just put together a little lab and have been tinkering with some concoctions...my holy grail right now is a cherry cordial...I can't quite get it right. I'm using concentrates from The Flavor Apprentice and LorAnn Naturals . I'm attempting to combine Natural Cherry (12%), Bavarian Cream(8%), Brandy[5%) and Natural Chocolate(5%) trying to duplicate a Russell Stovers Chocolate covered Cherry, but it's just not working..any suggestions on alternative flavor concentrates or tweaked percentages would be greatly appreciated.

I wish I could help with that but a decent cherry is my holy grail and so far it's eluded me. The best 2 have been tino Milano (inawara's posh brand, fruity but more plum than cherry) and Capella (sweet and more candy cherry than fruit). All the rest have a chemical taste which is like nail varnish remover. I've almost given up now as I think I've tried almost all the cherrys there are and have still not found the one :(

I agree with Purplefowler on the chemical taste of cherry. It must be one of the most difficult flavours to replicate. All I can suggest is go back to the drawing board. For my chocolate mixes I blend two different types of chocolate together to get the taste I require.
So as an idea on that basis maybe get as many different cherry concentrates as funds will allow and mix at very low percentages trying different combinations (just mix a ml or two at a time). Not guaranteed but if you are set on getting it right it may be a starting block. Good Luck.
