I would need to dig out my real version and test it but I reckon it's pretty bang on. Had a few hiccups along the way with ratios (too much rum, not enough coconut etc) and don't actually know the exact amounts now but this is pretty close. Now I just need to remember how I made it. I didn't write anything down. Doh! That's me all over. 'Hit and hope'.
