Bakewell Tart

I have tried several Bakewell tart juices and so far not found a nice one
Every one so far has tasted very chemically

Tried that one, I thought it tasted of chemicals - let it steep for a couple of weeks - still tasted chemically

I reckon you have to be careful with additives, the Ethyl Maltol in this recipe.
You're having trouble balancing the strawberry/raspberry and the almond in the marzipan.
EM will make your fruit pop but it will also mask softer, subtler flavours ... the almond in this case. So you might well go around the houses balancing if you start out with the EM in there.

I would trial a new recipe without any additives, get the flavours balanced and then decide whether you need to use EM, sweeteners etc ... they should go in last for a particular effect. When you finally add the EM you will taste the effect it's had on the whole thing ... you might well decide that it's completely unnecessary.

I'm expecting a few deliveries next week, so will be able to mix up more stuff, i'll try a couple version without EM and see how they go :friends:
 
Just diving in with two penneths worth of bakewell tart - many folks have had success by using an amaretto flavour concentrate for the almond part, rather than marzipan. That should take away any need to add additional sweeteners.

I do have some Amaretto, forget which make but found it a bit wishy-washy, i'll have a looksy for some different brands.
