I think your main problem is trying to do it as one wire, It would also appear that one side may not be connecting properly as youre getting so much variation in resistance, check everything is tight one more time then give it a toot!

I have big hands too lol but as @u8myufo says they should be made from 2 pieces of wire the same length which is what I was trying to explain earlier a 1.5 mm drill bit is your friend when building coils or precision screwdrivers. Whichever you find easier some people even use cocktail sticks. As long as they are uniformed same wraps same length of wire, then you should come out with some pretty badass coils which will last a good while. You should try the aqua with organic cotton that's a game changer ; ) Happy building feel free to give me a shout if ya need

Going to start again, got massive flooding and leaking, might leave it till tomorrow, still got to put a new coil on my kayfun which I never seem to have a problem with

Thanks guys, got it working at 2.09 ohm. Not bad vape but there's a bit of a gurgle, wicks not in the juice holes correctly I'm guessing?

Um, why would using a single piece of wire make any difference? The coils will be connected in parallel via the posts anyway! Admittedly you have more flexibility with regards to the length of the tails if you use two pieces.
