Hi Apes,

Any suggestions on the best place to get EM? Crystals? Pre mixed? which is better?

I usually use a sucralose sweetener when I need some extra sweetness but it has been suggested that EM may enhance flavours as well as sweeten a mix. Anybody have any thoughts on this?

EM can add a candyfloss flavour to liquids, and to much can completely overpower and ruin the taste.

have you considered Stevia as an option instead?

stevia and EM can be got from leisure liquids

i use em to give my mixes that candy floss taste or take the edgew off. and sweetener to sweeten.
many people say em is a sweetener but i disagree.
be very careful if using em only 1 or 2 drops per 10 ml. you will be very surprised how strong and little you need.

I had very mixed results with EM. On the one hand I found that it did sweeten and smooth, but it's just not for me, as a sweetener. I get a burnt sugar after taste.
I do get on OK with sucralose as a sweeting additive, but these days, I'm favouring "flavours" as my way to add a bit of extra sweetness to a mix, eg the "sweet creams" (sweet cream, Bavarian, catalan, vanilla bean ice cream), and fruits, eg dragon fruit, apple, and pear.

Agree with all ... EM can enhance some flavours and mute others.
If you want to sweeten, use a sweetener, there are options available.
There is a sticky thread on EM above this forum if you want to find out more.

There are some fruit flavours which don't get better or stronger if you add more concentrate, instead the flavour worsens and can become perfumey. Adding EM in this scenario can enhance the flavour but it can also dull other flavours in the mix.

I have to be honest I don't use that much sweetener. I was just interested in EM as someone told me it can be used as a flavour enhancer as well as a sweetener. I was just interested to see what others thought about it and whether you get better results from home mixed or pre mixed.
