You should check the thread on steeping as Bryan123456 says to leave the lids on and have 30% air space which will give you better results and Bryan is Mr Liquid he knows how to get the best out of liquids, I used to leave my lids off before reading the thread

Aha I think I'm gunna give this ago as have just started to steep some egg custard tart and rhubarb crumble with custard, will let you know the results, thanks mark!
