Saucepan?

Hey I'm going to make some bigger batch's tonight and I was thinking to do it in a saucepan over low heat....anyone done this? Is it a good idea?

Waiting an extra couple of days or weeks for a juice to mature is nothing.
I'm still waiting for my bottle of 20 year old Glenfarclas malt I ordered in 2001 to mature.
