Is steeping a new juice essential? do you? if so what is your choosen method for best results.

I have just ordered some lemon meringue pie and it suggests steeping it.

Its not necessary, however some juices do require it :)
 
Is it best just to leave the bottle open with the occasional gentle squeeze to refresh the air within?

The beat method of steeping from what I understand, is to leave it with the stopper off in a cool dark cupboard for 5-7 days. Give it a good shake every day ( after replacing the cap of course )

I'd suggest that you don't leave the top off any steep. Both PG and VG are hygroscopic / humeticants and will absorb water vapour from the surrounding air - this includes anything carried in that air including dog farts kiddy sneezes and all the nasties therein. Juices vary - some steep well in daylight others are better in the dark but warmth invariably helps.
 
I never used to do a proper steep (just used to leave it alone for a couple of days) but since using Capella flavours I now leave them for a week with the lids off in the coolest part of my airing cupboard, giving them a gentle daily shake. The airing cupboard is the safest place in my house. It makes a huge difference to these flavours. Not all premixeds need it but it certainly won't do any harm and some bespoke mixes do suggest it to get the best from it.

I leave the lids off but the dripper on-am I deluding myself in your esteemed estimation? You know I trust your opinion greatly when it comes to all things DIY :)

Really? Ah thanks ! I read a few conflicting ideas today about warmth vs a cool place to steep, but warmth actually does make more sense thinking about it. So leaving the cap off doesn't really help the process along either then as well as the whole germ thing, doggy farts lol!

One of the reasons that flavour manufacturers use PG and alcohol is to stabilize some essential aromatics. Whan you mix you release these into a bigger solution and in steeping you allow the bigger solution to stablize - some of these aromatics can be volatile (not go bang but evaporate off) and float off into the surrounding air in an open steep. Think of a packet of fresh ground coffee - it smells great when you open it. Seal the bag and put it in the fridge and it retains some of the freshness and aroma - leave it open at room temperature and much of that will disappear.
