2,3-Pentanedione (PD, acetyl propionyl) is a commonconstituent of synthetic flavorings and is used to impart abutter, strawberry, caramel, fruit, rum, or cheese flavor in beverages,ice cream, candy, baked goods, gelatins, and puddings(Winter 2009). PD also occurs naturally as a fermentation productin beer, wine, and yogurt (Pejin et al. 2006) and is released
