I've just recoiled an Evod with .25 wire, 5 turns and I'm getting a reading of 2ohms. If I were to use .20 wire would the ohm reading be more than 2ohms or less?

It would be more.
In thinner wire there is less room for the electrons to flow through, so it's causing a higher resistance.

So, if there is no wire, the electrons are stuck and the resistence is at it's highest?

yes but you got to be careful as a lot of devices wont run a coil below 1.2 ohms unless its a mechanical device

I think I'm happy with anything around 1.8/2.0 at the minute. What I really don't understand is all the high voltage stuff. What I mean is surely you can achieve the same power output with a lower ohm and voltage as you can with a higher ohm and voltage so is there a genuine benefit of running at higher voltages?

My dad taught me to think of electricity as water and wires as pipes. So if you have a bigger pipe you have less resistance and the water can flow quicker..
