rethinking flavour

it’s only me that does it, no?

It’s as bad as ending a statement with “no”
:D
What's your view on this @ZT - without giving any secrets away, what sort of total percentages do you mix to?

Remember the date concentrate? That's fabulous at 0.2% - can taste the skin, and all those toffee notes. I imagine it has some ethyl maltol in it, which I'm convinced mutes things/saturates your palette - so reducing to 0.2% would mitigate that

Honestly I don’t think it’s something that can work with all flavours or all people. Though it is defo the case with some.

other factors are : is the person mixing a “super taster”

@zouzounaki I know for a fact finds some concentrates too strong at levels others can barely taste (I’m fairly sure he’s a “super taster”). So individual taste comes into it as well. I have a heavy suspicion people who stick to home mixing fall into two categories

A: super tasters who prefer a lower percentage to that commonly found in commercial and

B: people who like to keep it cheap (and nothing wrong with that).

As such I reckon a lot of home mixers could benefit from pairing it back a bit, to see where they sit.

I base this a lot on people who buy one shots - I often see them say I tried it at less percentage and it was tasteless.

From a commercial perspective - we have to deal with the whole range of strength of pallets, and I suspect those with less sensitive pallets are far more numerous than super tasters.
That date concentrate is ace - I really must do something with that!

He’s super loads of things!

opinionated

annoying

wrong

and also interesting at times

there are only a few premixed liquids i’ve ever liked. for me they are probably still over flavoured, but the flavours are balanced in such a way that i do find pleasant to puff. it might be an interesting experiment for me to dilute them substantially. i’ve bought some premixed versions of concentrates that i like a lot and found them far too strong.

but i don’t think it’s as straight forward as taste bud sensitivity. for example, i often like eating very strongly flavoured foods that many other people dislike or find completely unpalatable. a super taster surely would be more inclined to eat things that others found fairly bland?

maybe it doesn’t translate directly to flavours in food, but i think it’s unlikely someone would be on the opposite extremes of both.

as for the date concentrate, i think it definitely works best at <1%.

Interestingly - it’s manufacturer recommended dosage rate is 10-20%

I’m not at all surprised you would find it different :)

i think it’s also interesting that the flavours taste notably different at lower concentrations (to me, anyway). it seems there are aspects that are getting lost when the concentration goes above a certain level.

Different does not mean better..... it's all subjective

it doesn’t necessarily mean better, but i don’t think it’s entirely subjective. most people would find a pot of soup with 100 stock cubes in it unpleasant.
