now It suddenly tastes metallic
I get this from Kanthal wire and ever so slightly from NiChrome wire as well. This is the main reason why I switched from commercial coils to DIY coils, where I have full control over my builds (and it's a lot cheaper and tastier too).
If you have the RBA section, you can try making your own coils without spending a fortune on RDAs or RTAs. If not, I believe you can get the RBA section for $10 or thereabout.
Stainless Steel, SS316L is a wire that has a very crisp flavor. Some say that Ti is just as good or even better with flavor, but it's more expensive and you're only supposed to use it with temp control (dry burning can cause it to form an oxide dust layer which may be a hazard). Stainless steel is a very safe material, you can use it both in power mode as in temp control.
So if I were you, I'd give that a try. Order some wick (Cotton Bacon v2 is easy to work with and works well), a box of pre-made claptons or fused claptons and see how you like the RBA section. You can (and I suggest you do) even experiment with different materials, kanthal, nichrome, stainless steel (as the most obvious) and see what difference they make.
