Maybe there's a better way, and perhaps everyone uses them anyway but here's a kit suggestion for anyone who might benefit from it, a pair of those surgical type scissor clamp things for holding on to wire, tightening it up and generally keeping control of things; especially when it's very thin and has a life of its own.
I secure one end, wind by hand, then secure the other end to tighten, also means I can put the whole thing down without any danger of it unraveling.
They're solid enough to never let go, and gentle enough to not mangle the wire - and in any case, I'm usually cutting it off at exactly where the scissors haven't clamped anyway and since I only need a few mm longer than steam engine tells me the finished wire needs to be, I rarely have to cut off and waste more than 1cm.
Not a lot more to be said, other than a slightly blurry photo to illustrate how I use them; building a pair of 12 wrap Ni200 AWG28 coils on a 5.6mm bolt.... that I wish was rather longer !
