Not so scary after all

It will become easier with practise, honest :)
Another trick I use is to hold the wick, clip and wire together with my thumb. Then make the first wrap diagonally away from my thumb and then wrap a nice 5 wraps, all evenly spaced and neat as I can make it. Then unwrap the first wrap so I end up with 4 nice wraps

Ahh I see what you mean. That's a good idea, getting it started was the hardest bit and it was the first wrap I had the most trouble with. I didn't think of doing an extra one and unwrapping the first one!
 
I recently started using nail clippers instead of scissors and its a much cleaner cut, the silica moves away from the scissors if you're not pulling it tight so you end up with a diagonal cut. Really doesn't work on a protank.
I did try coiling on a drill bit or tightly threaded bolt but it didn't really work for me. I get a better result if I use the good old straightened paper clip trick
Edit: for @man_d when you're going to wrap the coil around the wick if you hold a pin, needle or straightened paper clip along the wick. Then wrap around that too then your coil won't be too tight and should (hopefully) be more consistent

Nail clippers are definitely the way to go. I like the needle idea, it's probably the only method I hadn't tried. At what point do you pull the pin out? After the coil is installed? I guess it gives you something to pull down on to pull the coil down tight. I would still be worried about wrapping to tight & constricting the wick. With practice on the drill bit method I find not only do I get an even coil there is even pressure on the wick. Practice with any method is the key.
I had a go at a Stainless steel wick on an Evod. It made recoiling easy, although a bit of fiddly to get rid of hotspots. The taste & wicking were brilliant but it leaked like a bugger. I think it was the 'round wick in a square slot' that makes it leak, if you could shape the wick to fill in all the gaps it might work better. The hotspots are an issue too. For now I will stick to silica.

When to remove the pin depends on what I'm building for. If it's a vivi nova head then I remove the pin straight after wrapping but for the protank I leave the pin in until I'm done installing the coil.
When you tried ss mesh on your evod did you just use mesh or was it a hybrid wick with a silica core? There's a thread on here about using a ss mesh wick on a protank that might be helpful

I just use straight ss wick offcuts from my Genesis style atomizer. I found the Genesis way too fiddly. It would work fine one minute then on the next puff it would get a hotspot and taste burnt until I fixed it. I much prefer the 'point & shoot' of Kanger clearo's. I will check out the ss portank thread as I'm getting dry hits with silica at the moment from mine. I have put it down in favor of the new Kanger T3S which is great. All the benefits of the evod with a bigger tank.
