DIY Custard Collaboration Thread

For me, using a custard concentrate is like buying microwavable pancakes. It just isn't really homemade if you haven't made it from scratch.
I use vanilla, cream & toffee or butterscotch

Thats why I went to Tesco & got a tin of Ambrosia Devon Custard, to try and pick out all the flavours, I failed miserably hence buying the concentrates lol.. I do agree though..

But according to Nigella, (my very very favorite TV chef) her recipe is Cream, egg yolks, caster sugar, cornflour and a vanilla pod.. so the sweet, the Vanilla and the cream is all do-able but how do you get egg into it without a concentrate.?

Well - in theory an egg concentrate might add to the blend (egg nog?), but of course this isn't cooking - we only have to create the flavour, not necessarily add flavours of all the ingredients in a real custard

Fleabag Hmmm Good Call.. I did see egg nog listed a few times on American websites, I thought this was for a nutmeg hint.. :)

I do have a nutmeg concentrate. Only really used it for the first time recently in a rice pudding blend. Not sure I'd want to add anything with nutmeg to a straight custard

Sadly it doesn't quite work the same with flavourings as it does with food recipe ingredients (and why is Nigella adding cornflour to a custard thickened with egg yolk? Totally unnecessary - she's daft but lovely :D )

Get used to your flavourings first as independent taste components (single flavour juice) :) it makes it much easier to attempt identify components in more complex juices. Bavarian cream is a good base for a custard, you can work from there - I also use a tiny bit of DDL, but to my taste we are talking about 3-4 drops per 30ml mix as it takes a long time to mature. To give an example, I made a single mix of Bav. Cream with a couple of drops of DDL back at the beginning of March and it's taken until now to taste lovely, was quite bitter/burnt until then without the roundedness of flavour I want.

If you want to try an excellent eggy-nutmeggy vanilla custard to give you an idea, then try VaperCaper's Vanilla Custard - Very different from your current favourite Steamgunk one, but still a vanilla custard :)

omg x im going to try and follow this thread, as i diy but have to admit i just cant do a decent vanilla custard, steamgunk and gvc are top for me ( but i do love capella french vanilla )

i made some diy caramel custard which isnt to bad but needs to be a bit sweeter dose anyone know how to make it taste sweeter without adding any sweetner to it as im diabetic and i dont know if vapeing e juice with (Stevia & Sucralose) in would afect my blood sugars
